Meals on Board

For breakfast we usually have oatmeal with fruit and nuts. Sometimes yogurt, granola with fruit. Harold makes amazing french press coffee. Lunch, if we are sailing, is usually a wrap of some kind. Turkey, ham, cheese, egg salad, tuna salad with chips (they taste so good on the water and are nice and crunchy!) with apple or orange slices. Dinner last night was a burrito bowl. Red Lentil Curry, BBQ Chicken thighs, Porkchops, Beef Stew, Lemon chicken, Bean Soup and Beef Macaroni with spaghetti sauce are some of our favorite entrees. It’s so nice to have a fridge and freezer. We can stock up about a weeks worth of meat – freeze it and bring it out later in the week. There’s plenty of room for veg we stock carrots, celery, romaine, red and yellow and green onions, broccoli, tomatoes, cauliflower. Our fruits are apples, bananas, oranges, melon along with some canned applesauce. I stock pastas, couscous, quinoa, brown rice, small potatoes.

In addition, I found some amazingly good canned meats – roast beef, ground beef, and chicken to keep on hand. Although I’m not keen on canned veg – I do keep some green beans and peas on hand to thow into one pot meals. I baked some cornbread the other day to go with our bean soup. This was the first baking I’d done all summer.

We do have a decent stock of snacks – Wheat Thins, Triscuits, Graham Crackers, McVitties Digestives and Harold fruit and nut mix (Dark Chocolate Medley) as well as Cliff Bars and potatoe and tortilla chips.

Sunday’s we try to have a special brunch – pancakes, or eggs and bacon, Marcia McMuffins or an omelette. As today is Sunday, a spinach and feta omelette is on the menu.

Suffice it to say we are eating well. Our galley is great and I do love my Billyboil.

Oops Harold just discovered we left the port in the head open for the driving rain. Well, it’s time to clean the floor anyway…….
